Mise en place

Saffron blooms in warm milk for ten minutes. Cardamom is hand-crushed, never ground. Long-grain basmati soaks for thirty.

Slow-fire

Onions caramelise in pure ghee for forty minutes. No powder masala, no shortcut paste. The base layer is built, not assembled.

Beat 03
The dum

Sealed under a dough lid, rice and masala steam together for twenty minutes. The seal is broken once — at the table.

Plate · serve

The crust cracks open in front of the guest. Aroma first, then plating. The technique gets out of the way.
