Saffron blooms in warm milk for ten minutes. Cardamom is hand-crushed, never ground. Long-grain basmati soaks for thirty.
Onions caramelise in pure ghee for forty minutes. No powder masala, no shortcut paste. The base layer is built, not assembled.
Sealed under a dough lid, rice and masala steam together for twenty minutes. The seal is broken once — at the table.
