The daily programme is the one worth getting right

A standing weekday lunch is the only corporate catering format that compounds. It runs on a minimum of 50 plates a day, with eight cuisines on rotation and a weekly menu vote. It starts with a free 5-person tasting; if two-thirds say yes, delivery starts the following Monday on weekly billing or a monthly retainer, no lock-in. That gives a workplace time to find out what its own people actually eat.

Eight cuisines rotate through the week: Punjabi, Jain, Gujarati, Maharashtrian, Thai, Italian, Chinese and Mexican, all fully vegetarian. Jain plates run alongside the standard rotation daily rather than as a separate order.

Dietary spec belongs in the document, not the phone call

Jain food comes from a fully isolated Jain kitchen, running since 2012: separate prep, separate utensils, strict Jain spec with no roots rather than a no-onion-no-garlic approximation. For recurring meeting catering, the right move is to fix the dietary sheet once, at account setup, and let it govern every delivery afterward. Renegotiating spec per meeting is how mistakes reach the table.

The same applies to offsites. A three-day leadership programme is twelve service moments, and a spec that holds on day one has to hold on day three when the schedule has already slipped twice.

What a good brief contains

1. Headcount, and whether it is fixed or a range.
2. The slot: not the meeting start time, the time food must be on the table.
3. Format: drop-off, buffet, or plated.
4. Dietary spec in writing, Jain and otherwise.
5. Building access: service lift, security clearance, pantry availability.
6. For recurring programmes, the billing contact and the start date.

Building access is the item most often left out and the one most likely to cost a delivery its window. Mumbai office towers vary widely on service-lift protocol, and a delivery held at reception for fifteen minutes is a cold lunch.
