Heat a cast-iron or thick-bottomed pan on medium. No oil. Tear the Paneer Makhani directly into the pan.

Warm the naan on a dry tawa — 40 seconds per side, pressing lightly with a towel until it puffs. Wrap in cloth.

Stir the gravy. If it's thickened past pourable, add two tablespoons of warm water. Taste for salt.

Plate the gravy in a warm bowl. Drizzle cream across the top; crush kasuri methi between your palms over it.

Serve with naan, a kachumber of cucumber-tomato-onion in lime, and a green salad alongside.
