Tear the Pav Bhaji onto a flat tawa or heavy pan on medium-high. Let it hit the heat and spit a little.

Add a tablespoon of butter. Mash the bhaji into the pan with the back of a spoon as it heats; work the butter in.

Split the pav. Butter both cut faces generously and toast on a separate hot tawa until golden at the edges.

Slice raw onion into thin rings. Squeeze half a lime over the bhaji. Add another knob of butter.

Plate the bhaji with toasted pav, raw onion and lime wedges alongside.
