Chole bhature is a Saturday-morning commitment. This version — same dark, smoky chana — needs only kulcha or bhature and fifteen minutes.

Tear the Amritsari Chana into a pan on medium heat. Add three tablespoons of water to loosen the masala.

Warm kulcha on a dry tawa — no oil. If using bhature, fry now while the chana simmers.

Grate a knob of fresh ginger over the chana. Stir in a teaspoon of chaat masala. Taste and adjust.

Slice one onion into thin half-moons. Toss with lime juice, salt and a pinch of red chilli. That's the quick pickle.
- 13 min
Plate the chana deep. Top with the quick-pickled onion, sliced green chilli and a dollop of cold butter. Serve with kulcha.
